  • 1 sheet puff pastry
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion
  • 10 oz cremini mushrooms
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese
  • 1/2 cup Gruyère cheese
  • Fresh thyme leaves
  • Salt and black pepper

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, melt butter and olive oil over medium heat. Add diced onion and cook until softened; then stir in garlic and mushrooms until browned.
  3. Season with thyme, salt, pepper, and optional apple vinegar until liquid evaporates. Remove from heat.
  4. Mix in cream cheese and Parmesan until creamy; fold in Gruyère.
  5. Unroll puff pastry on a floured surface; cut strips on each side for braiding.
  6. Place filling down the center and braid the strips over it.
  7. Brush with beaten egg and bake for 20–22 minutes until golden brown.
  8. Cool slightly before slicing and serve garnished with parsley.
