  • 2.5 lb beef chuck, cut into large cubes
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, sliced into thick rounds
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Heat olive oil in a Dutch oven over medium-high heat and sear the beef cubes until browned on all sides; remove and set aside.
  3. In the same pot, sauté onions and garlic until softened.
  4. Add carrots, celery, and red bell pepper; cook until slightly softened.
  5. Stir in tomato paste, crushed tomatoes, apple vinegar, beef stock, oregano, and thyme. Bring to a simmer.
  6. Return the beef to the pot and mix well.
  7. Cover and bake in preheated oven for about 2.5 hours or until the beef is tender.
