  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced (+ extra for naan)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste (Madras or Indian blend)
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping onion, mincing garlic, grating ginger, and cutting beef into cubes.
  2. In a large skillet, heat oil over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic and ginger for another minute.
  3. Stir in curry paste, turmeric, cumin, and paprika; cook for 2 minutes until fragrant.
  4. Transfer mixture to slow cooker; add beef cubes, crumbled stock cube, coconut milk, tomato paste, salt, and pepper. Mix well.
  5. Cover slow cooker and cook on low for 6-8 hours until beef is tender.
  6. While the curry cooks, prepare garlic naan according to your recipe.
  7. Serve hot garnished with fresh cilantro alongside warm garlic naan.
