  • 1 tablespoon coconut oil
  • 1 large onion
  • 4 garlic cloves
  • 1 tablespoon fresh ginger
  • 1 (14 oz) can full-fat coconut milk
  • 1 (14 oz) can crushed tomatoes
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon chili flakes (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Instructions

  1. Prepare all ingredients by chopping beef into cubes, dicing onion, mincing garlic, and grating ginger.
  2. In a pan over medium heat, melt coconut oil and sauté onion until translucent. Add garlic and ginger; cook until fragrant.
  3. Transfer the sautéed mixture to a slow cooker. Add beef chunks and spices followed by coconut milk, crushed tomatoes, tomato paste, brown sugar, lime juice, salt, and pepper.
  4. Cover and cook on low for 6–8 hours until the beef is tender.
  5. Taste and adjust seasoning before serving hot over rice or with naan.
