  • 2 lbs beef chuck or stew meat, cubed
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can coconut milk

Instructions

  1. Season beef cubes with salt and black pepper. Heat vegetable oil in a Dutch oven over medium-high heat and brown the beef on all sides for about 5-7 minutes. Remove from heat.
  2. In the same pot, sauté chopped onion until translucent (3-4 minutes). Add minced garlic and grated ginger; cook for another minute until fragrant.
  3. Stir in curry powder, garam masala, cumin, paprika, and optional cayenne pepper; toast spices for about 30 seconds before returning the browned beef to the pot.
  4. Pour enough broth or water to cover the beef; bring to a gentle simmer. Cover and slow-cook on low heat for 6-8 hours (slow cooker) or about 2-3 hours (Dutch oven).
  5. Once beef is tender, stir in coconut milk and simmer uncovered for an additional 15-20 minutes to thicken.
  6. Prepare garlic naan according to your favorite recipe or package instructions and serve hot alongside the curry.
