  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder or cayenne
  • Salt & pepper to taste
  • 1 cucumber (sliced)
  • 56 cherry tomatoes (halved)
  • 2 tbsp red onion (chopped)
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado (sliced)
  • 1 tbsp spicy mayo (mayo + sriracha mix)

Instructions

  1. In a bowl, combine cubed chicken with olive oil, paprika, garlic powder, chili powder, salt, and pepper. Sear in a non-stick skillet over medium heat for about 5-6 minutes until fully cooked.
  2. In another bowl, mix cucumber, cherry tomatoes, red onion, herbs, lemon juice, salt, and pepper. Toss to combine and chill.
  3. To assemble your bowl: Layer cooked rice at the bottom, add baby spinach if using, then top with grilled chicken, avocado slices, and chilled cucumber salad. Drizzle with spicy mayo before serving.
