  • 1 cup whole milk
  • 1 cup vegetable oil
  • 1 cup mashed fresh strawberries (or strawberry puree)
  • 1 cup sour cream
  • 1 box white cake mix (15.25 oz)
  • 1 box strawberry-flavored vegan gelatin (3 oz, like Jell-O)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 23 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream (cold)
  • Optional: 3-4 drops red food coloring for a more vibrant pink

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three round cake pans.
  2. In a large bowl, combine the white cake mix and strawberry-flavored vegan gelatin. Add eggs, milk, oil, sour cream, mashed strawberries, and vanilla extract. Beat until smooth.
  3. Divide batter evenly into prepared pans and bake for 22-28 minutes until a toothpick comes out clean. Cool on wire racks.
  4. For frosting, beat cream cheese and butter until fluffy. Gradually add powdered sugar and then cold heavy whipping cream; whip until peaks form.
  5. Assemble the cake by layering with frosting between each layer and cover the top and sides with remaining frosting.
