  • 0.5 cup granulated sugar (for crumble topping)
  • 0.25 cup unsalted butter, cold and cut into small pieces (for crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. For the cookie base, cream together softened butter and sugars until fluffy. Mix in one egg and vanilla extract, then gradually add flour and baking powder.
  3. Press half of the dough into the prepared pan.
  4. For the lemonade filling, whisk together lemon juice, sugar, flour, salt, eggs, and melted butter until smooth; pour over the cookie base.
  5. Prepare the crumble topping by mixing remaining flour with sugar and cold butter until crumbly; sprinkle over the filling.
