Ingredients

Scale
  • 1 tbsp vegan butter or coconut oil
  • 1 green apple, halved and de-seeded
  • 1 medium onion, diced (optional)
  • 1 carrot, halved
  • 4 medium tomatoes, halved
  • 1 tbsp stock powder
  • 3 cups water
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, heat the vegan butter or coconut oil over medium heat. If using onions, add them and sauté for about 2 minutes until softened.
  2. Add the chopped tomatoes along with salt, cooking until they are soft (about 5–7 minutes).
  3. Incorporate the halved carrots and green apples into the mixture. Pour in enough water to cover the vegetables.
  4. Let the soup simmer for 15–20 minutes or until all vegetables are tender.
  5. Allow to cool slightly before blending until smooth. For a thinner consistency, strain through a sieve.
  6. Season with black pepper or red chili flakes as desired and serve hot.
