  • 3 cups all-purpose flour
  • 2 2/3 cups granulated sugar
  • 1 1/2 cups unsweetened Dutch-process cocoa powder
  • 2 1/4 tsp baking powder
  • 1 1/2 tsp sea salt
  • 3/4 tsp baking soda
  • 1 1/2 cups plant-based milk
  • 3/4 cup neutral oil (e.g. canola, avocado, rapeseed)
  • 1/4 cup white vinegar (or apple cider vinegar)
  • 1 tbsp vanilla extract
  • 75 g good quality dark vegan chocolate, chopped (for frosting)
  • 1 cup vegan butter (baking stick style), room temperature
  • 1/2 cup unsweetened Dutch-process cocoa powder (for frosting)
  • 5 cups confectioners' sugar, sifted (for frosting)
  • 24 tbsp plant-based milk (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 1/4 cup canned coconut milk (not coconut beverage, for ganache)
  • 80 g good quality dark vegan chocolate (for ganache)
  • 1/21 kg dark vegan chocolate, chopped (for decorations)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round baking pans and line the bottoms with parchment paper.
  2. In a bowl, combine hot coffee with chopped dark vegan chocolate; stir until melted and set aside.
  3. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, sea salt, and baking soda.
  4. In another bowl, mix plant-based milk, oil, vinegar, and vanilla extract. Add melted chocolate mixture once cooled.
  5. Pour wet ingredients into dry ingredients and stir gently until just combined.
  6. Divide batter between pans and bake for about 30 minutes until a toothpick comes out clean. Allow cooling.
  7. For frosting, melt additional dark vegan chocolate. Beat vegan butter until creamy; gradually add cocoa powder and confectioners' sugar, then mix in plant-based milk as needed for consistency.
  8. Once cakes are cool, layer them with frosting in between and coat the entire cake with remaining frosting.
  9. For ganache: Heat coconut milk; remove from heat and mix in chopped dark vegan chocolate until smooth.
  10. Drizzle ganache over the frosted cake and top it with chocolate skull decorations.
