  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion (diced)
  • 3 large carrots (chunky pieces)
  • 2 ribs celery (diced)
  • 5 cloves garlic (minced)
  • 1 medium rutabaga (chunky pieces) or turnips
  • 4 large potatoes (chunky pieces)
  • ¼ head green cabbage (shredded)
  • 330 ml vegetable stock
  • ¼ cup soy sauce
  • Optional: 9 oz vegan beef or portobello mushrooms

Instructions

  1. Heat oil in a large Dutch oven over high heat.
  2. Sear vegan beef or mushrooms until golden; remove from pot.
  3. Reduce heat to medium and add onion, carrots, and celery; cook until softened.
  4. Stir in garlic for about 30 seconds until fragrant.
  5. Add flour to coat the veggies; cook briefly.
  6. Gradually pour in vegetable stock while stirring until smooth.
  7. Mix in rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, bay leaves, thyme, and rosemary.
  8. Bring to a gentle boil; reduce heat and simmer uncovered for about 45 minutes until potatoes are tender.
  9. Return seared protein to the pot about ten minutes before serving.
  10. Remove herb stalks before serving.
